Ingredients

  • 10 oz Cod Liver
  • 2 tbsp Tallow
  • 1 tsp Onion Powder
  • 2 tsp Rosemary
  • 2 tsp Himalayan Salt

Instructions

  1. Take Cod Liver out of the refrigerator and let it come to room temperature (about 30 minutes).
  2. Season Cod Liver generously with Onion Powder, Rosemary and Himalayan Salt.
  3. Preheat water bath to 130°F (54°C) for medium-rare.
  4. Seal Cod Liver in a vacuum-sealed bag with Tallow.
  5. Cook for 1-2 hours (for steaks) or 6-8 hours (for tougher cuts).
  6. Finish with a quick sear in a hot cast-iron pan to develop a crust.
  7. Cook Pork Chops separately using the same method, or add it during the last 7 minutes of cooking time.
  8. Let the meat rest for 5-10 minutes before serving.
  9. Serve hot, optionally with additional Tallow on top.
