- 2 tbsp Tallow
- 1 tsp Oregano
- 1 tsp Onion Powder
- 1 tsp Sage
Instructions
- Take Chicken Hearts out of the refrigerator and let it come to room temperature (about 30 minutes).
- Season Chicken Hearts generously with Oregano, Onion Powder and Sage.
- Preheat water bath to 130°F (54°C) for medium-rare.
- Seal Chicken Hearts in a vacuum-sealed bag with Tallow.
- Cook for 1-2 hours (for steaks) or 6-8 hours (for tougher cuts).
- Finish with a quick sear in a hot cast-iron pan to develop a crust.
