Ingredients

  • 4 oz Sardines
  • 2 tbsp Bacon Fat
  • 2 tsp Black Pepper
  • 2 tsp Himalayan Salt
  • 1 tsp Sea Salt

Instructions

  1. Take Beef Heart out of the refrigerator and let it come to room temperature (about 30 minutes).
  2. Season Beef Heart generously with Black Pepper, Himalayan Salt and Sea Salt.
  3. Preheat water bath to 130°F (54°C) for medium-rare.
  4. Seal Beef Heart in a vacuum-sealed bag with Bacon Fat.
  5. Cook for 1-2 hours (for steaks) or 6-8 hours (for tougher cuts).
  6. Finish with a quick sear in a hot cast-iron pan to develop a crust.
  7. Cook Sardines separately using the same method, or add it during the last 6 minutes of cooking time.
