Instructions

  3. Preheat water bath to 130°F (54°C) for medium-rare.
  4. Seal Beef Bone Marrow in a vacuum-sealed bag with Lard.
  5. Cook for 1-2 hours (for steaks) or 6-8 hours (for tougher cuts).
  6. Finish with a quick sear in a hot cast-iron pan to develop a crust.
  7. Cook Ground Beef separately using the same method, or add it during the last 11 minutes of cooking time.
