Carnivore Diet & Cholesterol: Heart Health

Let me address the elephant in the room: I eat meat, lots of it, and yes, I’ve had conversations with cardiologists about cholesterol. When I transitioned to carnivore, my biggest fear was that I was harming my heart. Three years later, my cholesterol markers are the best they’ve ever been. Today, I want to explain what happens to cholesterol on carnivore and why the simple “sat fat = bad” story is incomplete.

What Actually Happens to Cholesterol on Carnivore

Most people see increases in LDL cholesterol initially on carnivore. LDL particles come in different sizes. Small, dense LDL particles are concerning because they penetrate arterial walls. Larger, less dense LDL particles are protective. When you eliminate carbohydrates, you shift toward larger, less dense LDL particles—which is actually favorable.

LDL vs HDL: Understanding the Difference

On carnivore, HDL cholesterol typically rises substantially. In my case, my HDL went from 45 to 62. The ratio of total cholesterol to HDL is often more predictive of heart disease risk than LDL alone. My ratio improved dramatically.

Triglycerides: Often the Real Problem

My triglycerides dropped from 110 mg/dL to 52 mg/dL within six months. Elevated triglycerides + elevated LDL + low HDL is the pattern seen in metabolic dysfunction. Carnivore improves all three of these markers.

Inflammation Markers: The Bigger Picture

CRP typically drops significantly on carnivore. Mine went from 3.2 to 0.8. Removing inflammatory foods—processed seed oils, refined carbohydrates—while eating nutrient-dense animal products has a profound anti-inflammatory effect.

The Saturated Fat Debate

Recent systematic reviews show that saturated fat consumption doesn’t substantially increase cardiovascular disease risk when you control for overall diet quality. Despite high saturated fat intake on carnivore, the overall inflammatory and metabolic status improves because everything else in the diet is optimized for health.

When to Be Concerned

LDL above 200 without improvement in other markers, failure to see triglyceride improvement, or any personal or family history of premature heart disease. Get comprehensive bloodwork before starting carnivore and repeat after 3-6 months.
